The Breville Smart Oven Air Fryer (BOV860) and the Smart Oven Air Fryer Pro (BOV900BSS) look similar in photos, but the Pro is meaningfully bigger and meaningfully more capable. If you're trying to choose between them, the differences fall into four categories: size, cooking functions, hardware, and price.
Interior capacity. The Pro has a 1 cubic foot interior; the non-Pro is closer to 0.8 cubic feet. The Pro fits 9 slices of toast, a 14-pound turkey, and a 13-inch pizza. The non-Pro fits 6 slices of toast, a 12-pound turkey, and a 12-inch pizza. If you cook for more than two people, that extra capacity is the single biggest reason to step up.
Cooking functions. The Pro has 13 preset functions: Toast, Bagel, Bake, Roast, Broil, Pizza, Cookies, Reheat, Warm, Slow Cook, Air Fry, Dehydrate, and Proof. The non-Pro has 13 listed functions on newer revisions but historically shipped with 11; the practical difference is that the Pro's Slow Cook can run a full 12 hours and the Pro adds a dedicated Proof setting for bread dough.
Heating hardware. Both ovens use Breville's Element IQ system, which controls the heating elements independently to direct heat where the food needs it. The Pro uses six quartz heating elements; the non-Pro uses five. The Pro also has a stronger convection fan setup branded as Super Convection, with two fan speeds, which makes a noticeable difference when air-frying larger batches.
Slow cook. This is one of the cleanest differentiators. The Pro's Slow Cook function runs at proper low-and-slow temperatures (Low at around 200°F, High around 300°F) for up to 12 hours. The non-Pro can technically slow cook, but the maximum duration and the temperature precision are not as well-suited to braises and stews.
Build and accessories. Both come in brushed stainless steel. The Pro ships with a larger enamel roasting pan, a 13-by-13 baking pan, an air fry basket, a broil rack, and a pizza pan. The non-Pro's included accessories are sized to its smaller cavity.
Price. The Pro typically retails for around $100 to $150 more than the non-Pro. ShopSavvy tracks current prices and price history for both models, and historically the Pro drops the most around major sale events like Black Friday and Prime Day.
Which should you buy? If you cook for one or two people and counter space is tight, the non-Pro is usually enough. If you cook for a family, bake bread, slow-cook braises, or want to retire your microwave and toaster, the Pro is the right choice.
