Yep, the Chef'sChoice 15XV EdgeSelect can sharpen serrated knives. It’s handy because it’s designed to sharpen up your knives by turning those regular 20-degree edges into sharper 15-degree ones. And you can do this with both straight and serrated blades—so all your knives can get a nice sharp upgrade.
As the manufacturer describes it, the sharpener uses a 3-stage process with diamond abrasives. The first stage takes care of shaping the angle, the second refines it, and the third polishes your knife for top-notch sharpness. It’s got these advanced stropping stages and spring guides that make sure each knife comes out evenly sharpened.
Based on our research, this gadget is pretty user-friendly. Folks seem to agree that once your knives go through this sharpener, they feel like they did when you first got them.
It's straightforward—usually, just a few passes will do the trick to get the sharpness you want. That said, adjusting your knives to the new angle might take a bit more effort initially if you haven’t sharpened them in a while.
A heads-up: like most electric sharpeners that adjust blade angles, this one does take off a bit of material each time you use it. So, if your knives are valuable or have sentimental value, you might want to keep that in mind, especially if you’re planning to sharpen them regularly.
Following the instructions in the manual is a good idea to ensure you’re using it right and keeping your knives in good shape over the long haul.
Whether you're a pro chef or just someone who loves cooking up a storm, the Chef'sChoice 15XV EdgeSelect is a pretty convenient way to keep your knives, both straight and serrated, nice and sharp.
